Low Carbohydrate Recipes
Finding low carbohydrate recipes can be hard enough, but low carbohydrate recipes for vegetarians? That can be more of a dilemma. Because of the emphasis on protein, many low carbohydrate recipes feature some form of meat. But there is also plenty of protein in many vegetarian ingredients. More and more chefs are busting their brains to come up with good low carbohydrate recipes for the people who do not include meat in their diet. We checked out a bunch of them, but out of all the low carbohydrate recipes we found floating around out there, this one was one of the most satisfying to our palates.
Garbanzo Salad- from low carbohydrate, vegetarian recipes
Ingredients:
- 1 1/3 cups water
- 1 can garbanzo beans (15 ounces), drained and rinsed
- 2/3 cup uncooked couscous
- 1 medium size tomato, diced
- 1 medium cucumber, peeled, seeded, diced
- 1/3 cup red onion, chopped
- 2 tablespoons fresh parsley, finely chopped.
Dressing:
- 1/4 cup red or white wine vinegar
- 1 tablespoon olive oil
- 1 teaspoon oregano, dried
- 1/8 teaspoon black pepper, ground
Cook the couscous by placing the water in a small pot and bring to the boil over high heat. Stir in the couscous, cover the pot, and remove it from the heat. Let it sit for about 5 minutes until the water is absorbed, then uncover it and set it aside.
Put the couscous, garbanzo beans, tomato, cucumber, onion, and parsley into a large bowl and mix well.
In a small bowl, combine all the ingredients for the dressing and mix well. Pour it over the salad and toss well.
Cover the salad and put in the fridge to chill for at least 2 hours before serving.
This salad is great with any meal or is filling enough to be the meal. It can be kept in the fridge for up to 24 hours before serving.
